Peach Cobbler Uses Leftover Slices of White Bread!


 I like any recipe that is delicious and helps reduce food waste in the kitchen!  So, when I came across this little recipe that I had saved from the newspaper, I was anxious to try it out.  You can make a very easy peach cobbler using strips of white bread for the crust.  The sugary egg and butter batter that you pour on before baking makes a wonderful topping.  I added cinnamon to this recipe because I love the taste of cinnamon in my peach pie.  I found that mine needed
A longer baking time than the recipe said (mine took about  45 minutes).  I recommend vanilla ice cream with this warm cobbler!










This is the only mess that it made!

Two Chicken Salads and a Fresh-Tasting Coleslaw!

 
I tried this recipe from Southern Living yesterday and found it is a twist on the usual coleslaw!  (It has fresh lemon juice in the dressing). I thought I would post it because not only does it have a fresh taste, but the dressing has less fat than most slaw recipes.



You should try this one, but make sure that it's well-chilled before serving!
  Also, I had a request from a friend of mine for my favorite chicken salad recipe.  I promised to share my favorite hot version and my favorite cold version.  Here you go, Cathy!

Quick Tuna Salad Spread


Here's another of those quick spreads that you might want to make ahead and put in the fridge for sandwiches this summer.  (I know that folks either like tuna or they really don't like tune!). Also, you might be saying,"That's  really basic to include in a cooking post!"  But, in my defense, I've attended luncheons where the tuna salad wasn't a very good version.  Another reason to post this is I have some young readers who want some basic recipes.  My son, Blake, reads this blog and loves my tuna salad!  Now he will have the recipe.  Hope you enjoy it, too!

Marcia's Tuna Salad/Spread

Stir together these ingredients: 
-3 cans of tuna, drained
-2 stalks of celery, finely chopped
-1/2 Vidalia or sweet  onion, finely chopped
-2 sweet pickles, finely chopped
-Miracle Whip Salad Dressing (no substitutions!) Add enough dressing to make a creamy spreading consistency for sandwiches, or make it a little dryer if you plan to mound it on top of lettuce for a salad.  Chill in the refrigerator in a container with a tight lid.  (This is also very good spread on Townhouse or Ritz  crackers  as a snack!)




Lunch is served!

Refreshing Lemon and Herb Water



Nothing is more refreshing (and low calorie) in the summer than a lemon and herb-infused water.  I just finished cleaning out my flower bed in the front and I'm cooling off on the back porch with this healthy drink.  


  Get out a glass jar or even that drink dispenser that you usually reserve for parties and cookouts!  Fill it half way with ice, sliced lemons and add the herb that you like most.  I put in some lemon balm from my porch.  Leave the container close to your kitchen sink where people will remember to drink from it all day!
