Broccoli with Bacon

This is my favorite way to prepare fresh broccoli.  It leaves it crisp-tender with a nice hint of bacon!

1.  Heat 1 to 2 Tbsp  of olive oil in a wok or stir fry skillet.

2.  Place cleaned, chopped, broccoli in the hot oil. Toss it like you would stir fry.

3.  Let it steam with the lid on.

4.  Season with stir fry seasoning (or lemon pepper).

5.  Finally, toss in crumbled crisp bacon and it's ready to serve!

Strawberry Pie Glaze

This old recipe for strawberry glaze will make your pie taste like it came from Shoney's (or Elby's Big Boy).  The ingredient that gives it that distinct flavor is a box of strawberry Jello brand gelatin.

Clean and slice your strawberries.  Make the glaze in a heavy saucepan on your stove top, and when it's cooled, add the berries and scoop it into a pre-baked pie crust.  Chill.  Top with whipped cream.  Easy dessert!

Chili Lime Sweet Potato Skins

Here's a snack that's good for you!  Simple ingredients, easy to prepare and delicious!

1.  Thinly slice clean, whole sweet potatoes, leaving the skins on.

2.  Place in a single layer on cookie sheets that have been wiped with olive oil(I just put a little on a paper towel and grease each tray).

3.  Drizzle the top of potatoes with a little olive oil and season with chili lime seasoning and kosher or sea salt to taste.

4.  Bake in a preheated 400 degree oven until golden and edges crisp and curl up a little. You can turn half way through baking.

5.  Our son, Ben, likes them dipped in a little agave.  I like them plain.  Good either way!
