Hot Spicy Dish For A Cold New Year's Eve


Marcia's Chicken Enchiladas

Cook 4-5 skinless, boneless chicken breasts
Dice chicken; stir in 1/2 can of refried beans
Add 8 oz. shredded cheese, 1 tsp. taco seasoning
Also add one can cream of chicken soup
Put filling in soft tortillas and roll
In glass casserole dish, put some Enchilada sauce (I use mild)
Place rolled tortillas in casserole dish and top w/ cheese
Cover w/ non-stick foil and bake at 375 till hot
Remove foil for last ten minutes of baking
Serve w/ fresh lettuce and tomatoes

A New Year: A New Hobby


Well, we're facing a new year, thank goodness! I have been toying with the idea of doing a cooking/homemaking/frugality blog for a while. I love to write, cook and save money, so it's a perfect hobby for me! I have already done my time searching others' blogs, and their budgeting and cooking websites. They are very good , if you want the textbook way of doing things. I plan on my blog being more of a straight-scoop, no glamour, this-is-not Martha! kinda blog.

If you want to know how to come home on a night that your kids have activities after school; the dog still needs her evening run; and your husband calls and says he'll be late...again, but you don't want to spend money on fast food(too often), then my blog will have recipes that take minutes.

If you're living in a house, apartment or mobile home with limited space, but you would like to have a "pantry" where you can stockpile your bargain grocery finds, I will help you find some unorthadox spaces you may not have considered (i.e. your linen closet!)

Also, we'll venture into couponing a little, and once a week I'll review one of my cookbooks from my big selection of old and not-so-old cookbooks. I've collected these over the years of yard sale acquisitions and "book-diving" at thrift stores. I'm technologically challenged, but my gracious 14-year-old helped me put this blog together and will be my "IT support". Ben's a good sport!

So, I hope you'll join me on my new adventure. Check my blog out. I hope to have something on here every week. There may be a recipe you'll want to try or something about stretching a dollar that catches your eye...or maybe you just like to read about old cookbooks!
