Western Eggs with Red Hash


Sometimes, when supper time rolls around, you just want food that's easy to
make and that causes very little cleanup! Here is one of my solutions. It starts with leftover cooked potatoes from the fridge. The other chopped vegetables can be varied according to your taste(or what needs to be used up).

1.  Saute' diced onion and peppers with a little olive oil in an omelette pan (or nonstick skillet).

2.  Add chopped cooked ham or bacon. Those of you who like a bold taste can add fried sausage or chorizo!  Cook until hot through.

3.  Shove meat and vegetables to the side.  Add your eggs;  salt and pepper.  

In a separate hot skillet add chopped, cooked cold potatoes to a little oil and fry until they're browned and have crispy edges (I used my small cast iron skillet).

4.  Flip eggs half way through cooking.  Cover with a lid to finish the egg whites.

5.  Sprinkle with finely-shredded cheese.

6.  Plate the eggs and add the red potato hash to the side.  (You only have two small skillets and a chopping board to clean!)

Hot Corn Dip




We enjoyed watching the Super Bowl with a few other football-loving friends this past weekend.  Everyone was to bring their favorite game day food or snack.  There was everything from hot chicken wings to various homemade cookies, fruit, sausage balls...and of course, chips and dip!  
  One of the dips was baked in the oven and had cheese and corn in it.  I had never had a dip quite like it before (not even when I lived in Texas where they put corn and jalapenos in everything!).
  Like any good recipe,this one's been passed around.  When I asked for a copy of it, my friend said that she had actually gotten it from a mutual friend of ours.  So...since that friend happens to be in Florida getting a tan, I'm going to share it without her permission!  That's the kinda things people do...when they're envious that you're at the beach and they're not!  Just kidding, Kathryn!

Easy Cheesy Sausage Ball Appetizers!

I made some sausage balls for an office breakfast, and I thought I would share.  I use the basic recipe, but change it up to make the sausage balls a little more savory.  This is a no-fail easy appetizer.  I do like to mix them up the night before.  I find that it's easier to roll into balls once it has chilled overnight.  These would be great for an easy Christmas morning breakfast,too!  Just add some fresh fruit skewers and everyone can help themselves.

Sausage Balls
3 C packaged baking mix
1 lb Jimmy Dean pork sausage
8 oz shredded cheddar
8 oz shredded Swiss
1/2 grated Parmesan 
1/2 C milk
1 1/2 tsp Tones Rosemary/Garlic seasoning
1 1/2 tsp parsley
Mix all together and chill in refrigerator overnight.  In the morning, lightly grease cookie sheets, preheat oven to 350 degrees, and roll mixture into TBSP-sized balls.
Bake for 20-25 minutes or until brown (I turn them over halfway through baking).

Kraft Cheese Cookbook-1942





Here's a new addition to my old cookbook collection.  I thought you might enjoy it.  This little book is full of great salad, entree and sandwich ideas using the delicious Kraft brand cheeses.  I love the colorful pictures in this old cookbook! There is a 2-page spread of product pictures, so for anyone who loves vintage advertisement design, that's a bonus!

It's a very thin book.  It has 63 pages including a guide to cheese variety.  The book's copyright date is 1942, Chicago, Illinois, USA. Kraft Cheese Company.  The printer was Neely Printing Company of Chicago.  Love this one!
